I have been fortunate to work with patients on the ketogenic diet. The ketogenic diet is a high-fat, moderate protein, and very low carb diet. This diet helps to put patients in ketosis, which means they use fat as their main fuel source rather than glucose. This diet is highly effective at helping control seizure activity in patients with epilepsy. I currently work with adult patients on a modified atkins diet, this consists of between 10-30g of carb per day for most patients. I spend my little free time trying to develop ketogenic friendly recipes. It’s important for me to give these patients food that is delicious and beautiful to look at.
